Probably not. But it sure is a heck of alot faster and intuative to use. I have a set of stones that havent been used since the day they arrived since you have to plan ahead and soak them for like 30 minutes then try to carefully duplicate identical angles on both sides multiple times on multiple grit stones. Theyre not for the weak. A few alternating passes through the fine then with the polish is all my blades needed to get them like new. Im not a chef by any means but I enjoy cooking and do it 95% of the days and have 2 kids so not as much free time these days. This is a great compromise for me as its efficient and does a "good enough" job for me. Remember that a sharp knife is a safe knife. I am used to sharpening my knives manually, so an electric sharpener is a nice change. First, it works well. My knives were sharpened quickly and effortlessly. I was pleasantly surprised when I did the tomato test, and the blades went through the skin without ripping or tearing it. They just glided right through. The machine is very easy to use, and you only need to pull your knife through one time. It also sharpens extremely well. It is quiet until the blades are being sharpened, then you do hear the sound of the grinding, but it isn’t bad at all. Unfortunately, the course setting will tear up the bottom of your knife blade, even if you are being careful. I don’t recommend using the course setting unless you want to turn a butter knife into a steak knife. It really did do a number on one of my knives, and I didn’t want to risk the same thing happening to my other knives, so I just used the fine setting and that worked great. Also, I am not sure what the blue stuff is that got all over my blades when I used the polish setting, but it happened every time with five knives in a row. A very big issue for me is that it scratched three of my five knives, and the polish function didn’t get the scratches out. The overall quality is good, but it shouldn’t scratch the knife blades. I really like this sharpener for kitchen knives. It doesn't do great with smaller knives or pocket knives, as you can't get the entire length of a pocket knife into the sharpener. BUT with larger kitchen knives or fixed-blade knives, it works EXTREMELY well. Every knife I put through it came out paper-cutting sharp after just 2 swipes through each section. It doesn't scratch up the blade like other sharpeners I've used in the past. The claim of being quiet is true if it's running and you're not sharpening anything, but once you put a blade in, it's anything but quiet. But it only takes about a minute to sharpen a large kitchen knife, so it's not a big deal. After about a month of use and 20 or so knives sharpened, it has earned its place in the kitchen cabinet and will get a lot of use. Read more
