Been using Henckels knives for many years and they last for years. I did not have this style of knife so I went ahead and bought this set. They are quite lightweight but sharp. They are not a professional grade knife by any means but for random use, they work fine. Read more

If these two knives (we took advantage of the 5 and 7 inch Santoku Chef Knife two-for deal) were to fall to pieces the minute after being used until they normally needed honing again to maintain their edge, it pretty much still would have been a great deal! T The five inch knife is my wife's new go to favorite and I quite like the seven inch knife, which I find almost as good at food prep as our eight inch Henckel-Zwilling chef's knife costing considerably more. If, as I hope and now somewhat expect (after regularly using them both for awhile), the two knives prove to be as easy to keep sharp as their much more expensive, 'pedigreed' eight inch cousin, I think this could be just about the best buy in kitchen knives I've ever made! While I do still consider our eight inch chef's knife to be the best knife we own, to me, the Santoku knife, with it's much straighter edge, actually has some advantages over the 'standard' knife occasionally, particularly with some vegetables. They're very useful kitchen tools that I like quite a bit, and considering how little they cost, my wife and I are very glad to have them. A genuinely "good" knife should, in my opinion, be easy to keep sharp over the course of it's entire lifespan, the length of which should match or exceed my own. Whether that proves to be the case still remains to be seen, but they already have proven themselves useful and valuable additions to our collection of better kitchen tools and I suspect they will remain so for some time to come, hopefully from now on. Already, my wife and I are totally happy with our purchase and given the extremely low cost, I don't really see how we could think this wasn't a great buy, even if, as I jokingly mentioned earlier, they fall to pieces the first time the blades need normal maintenance. Bought these for my elderly parents. Nicely weighted, easy to hold, and sharp. Unfortunately, only a week later there is already some discoloration, looks like they are starting to rust. To be fair, I can't answer for user action/cause; maybe they forgot they were in the sink, who knows, but disappointed that this is already happening so soon. I couldn't clean it off easily either, afraid to take steel wool or harsh chemical cleaner to them. Any metal that starts rusting in a few days, regardless of usage (or misusage) is kinda sketchy to me. My mom has had knives for decades that are still in good condition, if these knives require some extra special handling, I don't think they are meant for regular households, or new cooks, or especially the elderly. Perfectly sized for chopping vegetables. The flat blades are sharp and cut more of what is being chopped or diced without having to articulate or draw the knife back and forth. Read more

These knives have been a great addition to my kitchen. They arrived very sharp and I reach for the smaller one the most - I do a lot of chopping and having a sharp knife is such a treat! I do hand wash and dry them. I am not sure if that is a requirement. Read more
