I used to be a chef so I know knives. I have used the most expensive knives in the world to the cheapest and I can confidently say that these are probably some of the best you'll get in this price range. You cannot compare these to the most expensive, professional knives. They are not even close. However, for what you pay for this set you will be very pleased with them as long as you take care of them properly. First off, they are not truly folded steel. Looks more like a laser etching to me. To the untrained eye they do give the appearance of a hand made, folded, Damascus aesthetic. If using at home and not in a professional setting then you will get compliments on them for sure. The blades come RAZOR sharp right out of the box, but being stamped out metal and not folded, they will lose their edges much faster and require honing. Again, if you are just using these in your home you may need to sharpen them once or twice a year depending on how often you use them. For perspective I have some German made, folded steel knives that I have owned for almost 10 years and have NEVER sharpened them more than a few passes on a honing steel. The reason I won't give these 5 stars is the handles. I really like the blades themselves, but the handles feel more like an afterthought. Maybe they were going for a more rustic look and feel, but they are uncomfortable to wield for more than a few minutes at a time. If you are using them for a significant task, your hand will tire quickly as there is virtually ZERO ergonomics on the handle. It should go without saying, but just so it's clear........If you have good knives DO NOT PUT THEM IN THE DISHWASHER!!! Even good steel does not hold up well with the harsh detergents and high heat of the dishwasher. Expensive or cheap knives all need to be HANDWASHED only. This product is more important to hand wash because the handles are lacquered and one trip through the dishwasher will make the finish on the wood come off, and I would guess the brass fittings on the handle would tarnish as well. If you are using at home, you will be more than happy with these knives. Hand wash them ONLY and dry them thoroughly before storage to prevent rust spots, and you will have these for YEARS. Read more

This knife set really impressed me right out of the box. The blades are razor sharp and cut cleanly through meat, veggies, and fruit with almost no effort. You can tell they’re made from quality steel — they feel sturdy and well-balanced without being heavy. The rosewood handles are smooth, comfortable to grip, and give the knives a really elegant, classic look. Not heavy at all, very lightweight. They fit nicely in the hand, even during longer prep sessions, and the shape helps with control when chopping or slicing. After several uses, they’ve held their edge nicely, and I’ve only needed a light honing to keep them sharp. Make sure you hand wash and dry immediately as these can rust if left wet. Don't use the dishwasher please! Overall, this is a great set for both everyday cooking and more serious kitchen work. The craftsmanship feels high-end, and the performance is excellent for the price. Definitely a set that looks as good as it performs. Great as a gift or keeper in the kitchen. Read more

I got tired of fighting with the dull, flimsy knives we've had in our kitchen block for years. Mashing a tomato instead of slicing it is a frustrating way to start making dinner. I decided to get a new set, and landed on these. I'm giving them a full five stars because for the money, the performance is just outstanding. The first thing I noticed was the look and feel. The rosewood handles are comfortable and have a good, solid weight to them. They feel balanced in my hand, like a proper tool should. But the real test is in the cutting. These things are wicked sharp right out of the box. I've chopped vegetables, sliced steak, and even broken down a whole chicken with them. They go through everything with very little effort, which makes all the prep work in the kitchen a lot less of a chore. The one thing to be aware of is the high carbon steel. This is what makes them so sharp, but it also means you have to take care of them. You cannot just toss these in the dishwasher or leave them wet in the sink. They will rust. I make sure to wash and dry them by hand immediately after I'm done using them. Some people might see that as a dislike, but I see it as the responsibility that comes with owning a quality tool. For this price, getting a set of knives that performs this well is an incredible value. You just have to give them a little respect. They've made cooking for my wife and daughters much more enjoyable. Read more

These carbon steel Japanense knives are super sharp and beautiful. They have rosewood handles that are elegant and pretty but I don't put them in the dishwasher. The handles have an unusual shape but they were very comfortable and easy to use for me. I cut through apples like I was cutting through butter. I cut up a raw whole chicken with ease. They are super durable and there has been no rust. These are expensive but the quality is amazing. Read more

Having a couple of other Hoshanho knives I knew the quality to expect with this 5 piece set. The weight of these knives is very impressive. I like it but it does take some practice to get used to it if unfamiliar with knives of this size. Having the assortment of knives that this set provides covers most chopping and slicing tasks. These knives definitely do deliver on sharpness. Take care and go slow while you are learning how to use them most effectively. Just like other high quality knives these do not belong in the dishwasher. I hand wash and dry them as soon as my cutting tasks are completed. I want to preserve the beautiful wood handles as long as I possibly can. The knives arrive in a very nice box making them a great choice for a gift. Read more
