I've been to Sword smiths in Japan and I know that these knives are one of the best. Kaizen means self sacrifice, change for the better and continuos improvement. Have these knives for about a month. They make knife work in the kitchen a breeze. It doesn't matter how ripe the tomato is, you can still slice it paper thin. They feel great in your hands, but I prefer a little wider grip for my extra large hands. Read more
