Nordic Ware Formed Angel Food Cake 16 Cup Twilight Blue

This Minnesota-made pan is top-notch! It is light, not flimsy, (as one reviewer said) and is made of perfectly formed anodized aluminum. If you are familiar with Fat Daddio pans, I'd say that the weight of this Nordic Ware is similar, but maybe a bit heavier. When I opened the box, my first impression was "retro." It sort of looks like a pan your grandma would have owned, minus the color. Not that color matters for a baking pan, but I do like the matt (ish) green color a lot, and it has a slightly roughed-up texture. (nice grip). This pan stands out as unique. I made a Cook's Illustrated Coffee Cake recipe in the pan and noticed the sides rose rather quickly at 350 degrees, so I plan on lowering the temperature to 325 next time. That said, I typically lower the temperature that a cake recipe calls for because in my experience they rise more evenly at lower temperatures. (the sides don't set as quickly...) The buttered pan didn't stick at all. In fact, the cake slid right out. Of course, DO NOT put this pan in the dishwasher!! It's super easy to wash by hand. I highly recommend this pan. This is a great pan! Do Not let the light weigh fool you. It bakes perfectly. Over the Thanksgiving holiday I baked 3 pound cakes in it. They were baked to perfection. It bakes evenly! I am very pleased with this purchase. I was led to this pan by Chef and Baker on the YouTube channel. Such a wonderful necessity for baking. I am going to purchase another one. Having 2 is better!! This pan is very nice! I wish it was more durable as it is very light and if you were to drop it, it may dent. They no longer sell the ceramic version of this tube cake pan as I would have rather purchased that instead of this aluminium cake pan. Not my favorite but it works! Read more
