I Love this item so much I bought a 2nd one. Me and my hubby like to travel to a small little mostly Hispanic town about an hour away from us to get carnitas and tortillas and things like that. Well I went over La or day weekend and got 5 pounds of carnitas and when I got home several hours later my hubby was surprised at how hot the meat was. Reviewing after first use. [SAFETY WARNING for yogurt newbies: I was using store bought soy milk from a sterilized shelf-stable container, so I did not have to do the typical first step of sterilizing the milk. If you are NOT using shelf-stable milk (like in a tetrapac), you MUST do the sterilization step first.] I microwaved (in a glass bowl) 2 quarts of soy milk to 117F. I added this and starter, but no thickeners, into the pot. I latched it down, and left it on the countertop in the kitchen (ambient temp was in the 50's-60's overnight, and 70's in the day). At 9 hrs, surface of yogurt was 87F. At 18 hrs, surface was 79F, center was 84F. Yogurt came out exactly the way I like it! (Spoons up like store bought yogurt, but doesn't hold that gel state after blending. But after blending, still a good deal thicker than buttermilk or keffir.) With my old method,described below, to get this same thickness I would have to have kept the milk around 160F for a few hours first. I was able to skip that time consuming step with the Stanley. Pouring it into jars when done: I use an immersion blender to homogenize it first so it is more pourable (hard to pour when in a blobby gel state). It was still as messy as pouring from the crock pot (my old method) as neither is made for pouring, but it was much smaller, easier, and lighter to handle than pouring from the crock pot. This Stanley pot will now replace my old way which was: putting soy milk in pressure cooker at "keep warm" setting for several hours or overnight, allowing it to cool to ~120F in the AM, warming crock pot on high for 6 minutes, adding milk and culture at ~120F to crock pot, putting crock pot (metal part and all) inside insulated shipping box, waiting 12-24 hrs. I never checked the 9 and 18 hr temps on this old method. It worked fine, but the giant box was taking up so much space in my kitchen when in use, and I hated getting it from the basement once a week. The Stanley is so unobtrusive, lightweight, and easy to wash (compared to crock pot), and it easily fits in a kitchen cabinet. I'm very happy. He is a contractor and looks forward to a hot lunch, seeings that we live in upstate NY& it gets quite cold. He filled it with hot soup this morning. I was so excited for this product I bought several. It keeps foods warm for a long time, At first it appears as a super quality beast, and it is... for a while! But in time, the inferior latches will almost crumble, breaking on you (think cheap Chinese plastic) one by one, and without latches the unit will eventually turn into a big paper weight! I read in a review to use boiling water to warm the container before storing food and I did that each time I’ve used this. I’m attending nature school with my kids and we often have celebrations that include food, but no electricity. This keeps food warm. I think it’s easy to use and transport. Love that the lid has a hook to hang it on the edge of the container. I thought it was pricey, but I’ve used it a few times and find it pretty valuable.
