I've been using expensive Wusthof knives for years. Then I discovered Victorinox after 2 different butchers told me that is all they will ever use. These are not as pretty as the Wusthof knives, but they are better and cost way less. I'll never buy anything else again. I've had their boning/fileting knife for over a year now. with regular honing, it's kept it's edge sharp longer than any other (more expensive ) knives I have. I bought this because it was cheaper than buying the knives individually and I got two extra knives. The two extra knives, I had thought of giving away or selling; they were the scimitar style knives. I’ve found I use those the most out of all them! Great knives! We try to keep the edge true with the honing rod, but we could be more diligent with that. I would say that the chefs knife, the reason I bought the kit, is much larger than I thought, which has led to me using it less. I find I use the scimitar boning knife a lot more than many of the others, which is funny bc I don’t have to cut out bones all too often. another gripe is that the little pairing knife that comes with it is so tiny. I bought a Victorinox fillet knife and was so impressed I bought these. The edge has a perfect finish. I am not a fan of rods, I prefer strops. After each use I lightly strop about 5 times on each side and have never had to take a stone to them. The case is nice but wish they shipped with better edge guards, even cardboard would be better. For longer lasting edge, use a bamboo cutting board and never use plastic. Read more
