This review is for the XXV Folding Chef Knife. First, it is important to note that this is a cheap knife ($14.99 at the time of this review), so honestly, my expectations were low. I only wanted a knife to use on car trips for a variety of simple food prep purposes. The 440A stainless steel isn't going to hold an edge well, but it will sharpen easily. More importantly, I will not cry if I lose it. So, by giving this knife a 4-star rating, it is no way a comparison with a high-end folding knife. In spite of the description of the knife having a natural olive wood handle, it is obvious from the product photos that it is most definitely not olive wood (the review photos are taken with olive wood as the background). It looks to me like mahogany due to the open grain and reddish-brown color. I do wish it had really been olive wood, as it would be easier to keep the handle clean because of olive wood's natural oil and closed grain. Perhaps I will make new olive wood scales for it. The knife is overall pretty heavy (6.2 oz.) and measures about 10.5 inches fully open. The blade flips out easily and locks securely with a knurled liner lock, with only a little flex at the hinge. The blade was reasonably sharp right out of the box. My only serious complaint about the knife is that there are some sharp edges on the back of the blade and the corners on the ends of the closed handle that will wear your pocket. A little extra quality control to soften the edges and corners would have helped. Read more
