The New Slow Cooker

Comfort Classics Reinvented

Brigit Binns

The author of Cooking in Season shows you how to make healthy ingredients, fresh flavors, and crunchy textures part of your slow-cooked meals. In this book, you will discover a whole new way to use your slow cooker to make more than one hundred succulent dishes by enhancing them with bright fresh flavors: Tender short ribs in a sweet and spicy sauce are elevated with a crunchy daikon, carrot, and fresh herb salad; zesty chicken-tortilla soup is layered with sweet corn, creamy avocado, and earthy cilantro; and sliced brisket is perked up with a verdant, herb-laden chimichurri strewn with sweet cherry tomatoes. The slow cooker has become one of the most popular kitchen appliances for today's busy home cook, and it is easy to see why: comfort has met convenience, with delicious results. The best slow cooking, however, is an art that is only achieved with a little finesse. This book reimagines what the slow cooker is capable of, bringing freshness, color, and texture to the flavorful stews and braises of slow cooking and creating a road map for the modern cook. Rounding out the book, the lush, tempting photography is not only mouthwatering but also inspirational, with visual ideas for textural and flavorful garnishes. Welcome to a whole new way with slow cooking.

A Succulent Story of Survival

Brigit Binns

A memoir sauteed in Hollywood stories, world travel, and always, the need to belong Prolific cookbook author Brigit Binns’ coming-of-age memoir—co-starring her alcoholic actor father Edward Binns and glamorous but viciously smart narcissistic mother—reveals how simultaneous privilege and profound neglect lead Brigit to seek comfort in the kitchen, eventually allowing her to find some sense of self-worth. In the old Hollywood of her childhood, Brigit seems to live in an elite world. But when her parents eventually divorce—her father flees and her mother sends her off to boarding school so she can more easily conduct her decades-long romance with a married California governor—Brigit racks up seven schools and a host of bad decisions before the age of 16. Marriage to an Englishman takes her across the pond and to professional cooking school. But when that life comes crashing down, she returns heartbroken and alone to Los Angeles eighteen years after vowing never to return. Here she thrives, cold pitching herself to top chefs as co author for their cookbooks. Peppered with humor and seasoned with optimism, Brigit’s story is an entertaining tribute to female resilience.

Encarnación’s Kitchen

Mexican Recipes from Nineteenth-Century California

Encarnación Pinedo

"It's a rare cookbook that is as pleasurable to think about as it is to cook from. But that's what Dan Strehl has accomplished with his elegant translation of Encarnación’s Kitchen, a book that provides a fascinating look at the life and cooking of the wealthy Californios in the final days of the rich Rancho culture of California."—Russ Parsons, author of How to Read a French Fry "At long last! It is with enormous pleasure that I greet Dan Strehl’s authoritative English translation, Encarnación’s Kitchen. I should like to have had the original Spanish edition as well, but I dream."—Karen Hess, author of The Carolina Rice Kitchen "Encarnación’s Kitchen is far more than a historical curiosity, or a mere kitchen fragment that sketches silhouettes of ingredients and techniques. The recipes of Encarnación Pinedo’s kitchen, brought alive and set in context by Dan Strehl (and Victor Valle’s lucid introduction), offer rich examples of how California’s Mexican culinary culture developed as it bumped into—and cross-pollinated with—young, multifarious America. These dishes lay bare the often overlooked reality that food can be more than a reflection of culture. Food, as Encarnación understood, can be a seductively delicious catalyst for social understanding, change, even rebellious protest."—Rick Bayless, author of Mexico One Plate at a Time

What I Saw (and Cooked) at the American Culinary Revolution

Jeremiah Tower

Widely recognized as the godfather of modern American cooking and a mentor to such rising celebrity chefs as Mario Batali, Jeremiah Tower is one of the most influential cooks of the last thirty years. Now, the former chef and partner at Chez Panisse and the genius behind Stars San Francisco tells the story of his lifelong love affair with food -- an affair that helped to spark an international culinary revolution. Tower shares with wit and honesty the real dish on cooking, chefs, celebrities, and what really goes on in the kitchen. Above all, Tower rhapsodizes about food -- the meals choreographed like great ballets, the menus scored like concertos. No other book reveals more about the seeds sown in the seventies, the excesses of the eighties, and the self-congratulations of the nineties. No other chef/restaurateur who was there at the very beginning is better positioned than Jeremiah Tower to tell the story of the American culinary revolution.

Chez Panisse Café Cookbook

Alice L. Waters

The multiple James Beard Award–winning chef shares recipes from her popular café, blending Mediterranean flavor with California style & fresh ingredients. Located above the more formal Chez Panisse Restaurant, the Café is a bustling neighborhood bistro where guests needn't reserve far in advance and can choose from the ever-changing à la carte menu. It's the place where Alice Waters's inventive chefs cook in a more impromptu and earthy vein, drawing on the healthful, low-tech traditions of the cuisines of such Mediterranean regions as Catalonia, Campania, and Provence, while improvising and experimenting with the best products of Chez Panisse's own regional network of small farms and producers . In the Chez Panisse Café Cookbook, the follow-up to the award-winning Chez Panisse Vegetables, Alice and her team of talented cooks offer more than 140 of the café's best recipes—some that have been on the menu since the day café opened and others freshly reinvented with the honesty and ingenuity that have made Chez Panisse so famous. In addition to irresistible recipes, the Chez Panisse Café Cookbook is filled with chapter-opening essays on the relationships Alice has cultivated with the farmers, foragers, and purveyors—most of them within an hour's drive of Berkeley—who make it possible for Chez Panisse to boast that nearly all food is locally grown, certifiably organic, and sustainably grown and harvested. Alice encourages her chefs and cookbook readers alike to decide what to cook only after visiting the farmer's market or produce stand. Then we can all fully appreciate the advantages of eating according to season—fresh spring lamb in late March, ripe tomato salads in late summer, Comice pear crisps in autumn. This book begins with a chapter of inspired vegetable recipes, from a vivid salad of avocados and beets to elegant Morel Mushroom Toasts to straightforward side dishes of Spicy Broccoli Raab and Garlicky Kale. The Chapter on eggs and cheese includes two of the café's most famous dishes, a garden lettuce salad with baked goat cheese and the Crostata di Perrella, the café's version of a calzone. Later chapters focus on fish and shellfish, beef, pork, lamb, and poultry, each offering its share of delightful dishes. You'll find recipes for curing your own pancetta, for simple grills and succulent braises, and for the definitive simple roast chicken—as well as sumptuous truffled chicken breasts. Finally, the pastry cooks of Chez Panisse serve forth a chapter of uncomplicated sweets, including Apricot Bread Pudding, Chocolate Almond Cookies, and Wood Oven-baked Figs with Raspberries. Gorgeously designed and illustrated throughout with colored block prints by David Lance Goines, Chez Panisse Café Cookbook is destined to become an indispensable classic. Fans of Alice Waters's restaurant and café will be thrilled to discover the recipes that keep them returning for more. Loyal readers of her earlier cookbooks will delight in this latest collection of time-tested, deceptively simple recipes. And anyone who loves pure, vibrant, delicious fare made from the finest ingredients will be honored to add these new recipes to their repertoire.

The Story of My Boyhood and Youth

John Muir

The Story of My Boyhood and Youth is a stirring autobiography by the great American naturalist, John Muir."When I was a boy in Scotland I was fond of everything that was wild, and all my life I've been growing fonder and fonder of wild places and wild creatures. Fortunately around my native town of Dunbar, by the stormy North Sea, there was no lack of wildness, though most of the land lay in smooth cultivation."John Muir (April 21, 1838 - December 24, 1914) also known as "John of the Mountains" and "Father of the National Parks", was an influential Scottish-American naturalist, author, environmental philosopher, glaciologist and early advocate for the preservation of wilderness in the United States. His letters, essays, and books describing his adventures in nature, especially in the Sierra Nevada, have been read by millions. His activism has helped to preserve the Yosemite Valley, Sequoia National Park and many other wilderness areas. The Sierra Club, which he co-founded, is a prominent American conservation organization. The 211-mile (340 km) John Muir Trail, a hiking trail in the Sierra Nevada, was named in his honor. Other such places include Muir Woods National Monument, Muir Beach, John Muir College, Mount Muir, Camp Muir, Muir Grove, and Muir Glacier. In Scotland, the John Muir Way, a 130-mile-long route, was named in honor of him.In his later life, Muir devoted most of his time to the preservation of the Western forests. As part of the campaign to make Yosemite a national park, Muir published two landmark articles on wilderness preservation in The Century Magazine, "The Treasures of the Yosemite" and "Features of the Proposed Yosemite National Park"; this helped support the push for U.S. Congress to pass a bill in 1890 establishing Yosemite National Park.
