Nice knife, and have given these as holiday gifts. The German steel is not quite as hard as a Henckels or a Wustoff, but it works and holds an edge reaonably well. Bloomhouse knives are attractive, easy to sharpen and are good for daily use. For the price, you get the German forged steel with a bolster and attractive olive wood handles , that are a nice bonus. If you get a good one - quality control seems to be a problem, we had one that needed to be replaced. These knives are imported by a company in California and don't seem to be throughly inspected before being shipped out, which can be an issue. Got one where the rivets stuck out and the handle wasn't attached properly, notified Amazon and was promptly replaced. You will find these knives have a nice balance and this knife actually weighs a bit more than the Zwilling 4 star 8 inch Chef's knife.
