Nice knife, and have given these as holiday gifts. The German steel is not quite as hard as a Henckels or a Wustoff, but it works and holds an edge reaonably well. Bloomhouse knives are attractive, easy to sharpen and are good for daily use. For the price, you get the German forged steel with a bolster and attractive olive wood handles , that are a nice bonus. If you get a good one - quality control seems to be a problem, we had one that needed to be replaced. These knives are imported by a company in California and don't seem to be throughly inspected before being shipped out, which can be an issue. Got one where the rivets stuck out and the handle wasn't attached properly, notified Amazon and was promptly replaced. You will find these knives have a nice balance and this knife actually weighs a bit more than the Zwilling 4 star 8 inch Chef's knife. My most unfavorite part of baking sourdough was cutting the loaf— until I bought this knife! It’s not just beautiful, it’s *extremely* effective and sharp. It’s definitely the best knife I’ve ever used to cut bread. I can tell the difference now if I use any other knife. I loved this so much I bought so many more for gifts for friends. My sister now says it’s her absolute favorite piece of kitchenware and we both travel with it if we bring bread anywhere because we don’t want to use another knife. If you bake sourdough or have friends who do, I completely recommend this as a gift to yourself or to them! It will totally change your bread cutting experience.
