I really love this little knife! It is great for skinning potatoes or other fruits and veggies. It makes peeling things much easier. The handle is perfectly shaped for a comfortable grip. It's just the right length where it doesn't feel too big or too small in your hand. The blade is very sharp, and well crafted metal. It doesn't start to tarnish or rust or chip or dull. The point is solid and not one too start to snap off like some knives have happen. The curve of the blade is also perfect for making peeling easy. Just about everything about this little paring knife is perfect. I think what I love about it, overall, is the hand feel. This is about the most important thing, when it comes to this category of knife, as the work is so "touch" sensitive. If the knife doesn't feel good in the hand, it won't be a good tool for the wielder. In this case, the handle, blade and weight all combine together quite well, nestling right into the palm and are perfect for those small, detailed kitchen tasks. As for the blade, while some might prefer a more traditional, straight edge, for a curved version, this is most excellent. The steel is solid, thick, and while quite sharp, not insanely so. I was a bit concerned about that, as I don't want a blade so sharp, that instead of peeling the skin on an apple, I do harm to myself with a little misstep... While surely it is sharp enough, I don't feel it's dangerously so. Good. I don't want to have to be over-careful for tasks that often are on auto-pilot, hand to brain. All in all, and especially at a $30 price tag, I think this is a solid option, and will provide much great use and joyful experience over the years. Read more

The Cangshan HELENA Series 2.75-Inch Peeling Knife is a great knife. When you hold the knife, you can tell it is a quality product. The knife feels good in the hand. The ergonomic handle rests gently yet securely in the palm for precise cutting. The knife has a nice distinctive weight to it that only quality knives have. I have some high quality german knives (wusthof) that I paid a lot of money for, and this knife seems similar and is so much less expensive. The knife pears produce easily with the curved blade. The blade is very sharp and has a distinct point at the end that is good for precise cutting into fruits and vegetables. Although the curved blade works incredibly well on small to medium sized produce, it will be more of a challenge when peeling larger items. Because of the curved blade, I think that the only way to sharpen the knife will be with a sharpening stone or to take it in somewhere. I have an electric sharpener but I don't think that is going to work. Great knife at a great price. Highly recommended. Read more

This knife is unique in its curved shape. Shape lends itself to peeling vegetables and fruits of smaller handheld sizes. It is incredibly sharp! This makes pleasant work for preparing foods. The shape takes some getting used to, but I found it was less stress on my hand. For example, many vegetables are curved and your hand is curved holding. Holding a knife similarly to wrap around the food to peel it is really smart. I've gotten used to it and feel less fatigued! This is very high quality design and I am so glad to have this helpful thoughtful tool in our kitchen! Read more
