The knives are extremely sharp and feel well-balanced in the hand. They cut through potatoes, carrots, and squash easily. Cutting a two inch thick beef steak into cubes was liking cutting through butter! They are a pleasure to use and make the cooking experience so much nicer! Thin slicing mushrooms is a breeze! Now I feel like a TV cook as everything is cut quickly, easily, and pretty much perfectly. I like the 17 piece set that I purchased but I feel that it is a little overboard for my home. Really, when will I be using a peeling knife? I use a standard potato peeler and I'm happy with that. A deboning knife? Nowadays the meat comes cut the way you want it from the butcher. I suppose that I may possibly use it someday but I'm guessing probably not. However the price was right for the set. One of the advantages of shopping on Amazon is that you can see what different sellers are asking. The total for my 17 piece set was $264.97. That's $100 less than the price on the smaller set that I was considering. Yes the set has more knives than I'm likely to use. But it came with all the knives I wanted except for the vegetable clever and came with steak knives as well. It also came with a beautiful gigantic knife block. Gigantic as in taking over the entire counter. It made me feel like my kitchen had suddenly morphed into a space station and the knife block and knives was preparing to launch into space. I'm a trekkie but that was definitely too much for me and my little kitchen! Out went the block and I put the knives up on my wall mounted magnetic knife holder and they look awsome! Overall I really like these knives. They have a sleek modern look and are the best knives that I've ever owned, hands down. However the price on most of the sets and single knives is at least double the price of comparable sets. This is the only downside I see with these knives. But if you can find a reasonable deal then go for it! Read more

I have owned this 23pc Cangshan N1 Series Knife Set for 5 years and I am still Amazed by the Quality and Look of these Knifes Yep you can go spend triple on some Wusthofs, Shuns, or Zwillings, I have friends who own them all and I still prefer mine. Another Commentor talked of rust. Never A Spec of Rust in 5 years but I also don't throw them in the dishwasher. hint hint. If you're like I was looking for an Exceptional Knife and tired of the quality issues over time with Chicago's and Wolfgangs etc I've owned so many sets I forget all the names, the point being these knifes are Razor Sharp and hold and edge longer than you would ever imagine any knife could to me they are equal to knifes 3 times the price. After over three years of use I am still extremely satisfied with this purchase. I use these knives three to four times a day with the pictured chef knife being used literally everyday. The knives all came extremely sharp and held its sharp edge for a long time. The chef knife has been sharpened only twice while some of the less commonly used knives have never been sharpened and remain extremely sharp after three years. I am somewhat an excessive compulsive when it comes to having high quality sharp knives. Immediately after using the knives I always: 1.) Hand wash the knives 2.) Hand dry the knives 3.) Replace the knives in their wood block Under these conditions I expect these knives will be in service another ten years. 14c28n is stainless steel made by the Sandvik group, a Swedish engineering company. Sandvik is known around the world for its high-quality metal-related products. 14c28n steel has a high Chromium and Carbon percentage. That mixture has one goal in mind: making a great steel for people worried about rust and corrosion. 14% of Chromium: Increases corrosion resistance and wear resistance. It also improves edge retention and strength. 0.62% of Carbon: Makes knives harder and more resistant. Too much Carbon could prove counterproductive – but this knife has the right amount. 0.6% of Manganese: Improves brittleness and hardness. 0.2% of Silicon: Adds strength to the steel. 0.11% of Nitrogen: Helps with strength (like Silicon) and edge retention (like the Chromium). 0.025% of Phosphorus: Similarly to Nitrogen and Silicon, it increases strength. 0.01% of Sulfur: Increases the steel’s machinability level. What does that mean? Simply put, 14c28n is great for kitchen knives and pocket knives. You will have no issue when it comes to dealing with different types of food and similar things that might corrode and rust a less resistant knife. All knives will rust under the right circumstances. I can't even imagine what people are doing to these knives who have written reviews complaining about the knives rusting. Take care of the knives and they will take care of you..... As far as quality, these knives are very well make and hold their edge. The only drawback is they do not do well in the dishwasher. Little rust spots started to form even though they are stainless steel. The feel of the handle is slightly off as they have the middle portion of the handle removed as a styling feature. If you like the feel of massive handle, then these are not the knives for you. If the rust issue was some how eliminated then I would have to give these knives a 5⭐️ rating. If you are looking for a good knife set that is average, This is not the set. This is a top quality heavy duty, well made knife collection. These knives are well crafted as you can see from the moment you open them. I read reviews that stated they were very sharp. Yes, These suckers are razor sharp as I nicked my thumb as I was cleaning them with a sponge. The sponge was sliced as well. I am okay though. The block is also well made. This is not a cheap looking wood block. there is no wood or plastic handles that other knives offer. the handles are one piece with the blade and have a prestige look to them. If you want a top end set that will last a life time, here it is. The scissors are fitting with the quality as well. It is worth the money. Read more
