Klaus Meyer Stahl 19 Piece High Carbon Exclusive German Steel Knife Block Set Black

I learned a lot about knives in looking for the perfect set - more than I thought I needed but let's get to the basics. First beware of any knife set which is not forged. I first tried a Henkels International set which is NOT Henkels of the German variety (named Zwillig) which is much higher grade and made in Germany. Forged knives have a bevel leading into the knife, not a solid sheet which goes into the handle and you can see the sheet in the handle usually or it comes straight out. Those 'plated steel' knives are usually cheaper and the Henkel folks make those out of India, China and elsewhere and they are not worth buying - unless you like knives that feel and bend like tin. So the journey started with what not to buy and after a lot of research on the high and medium end, I settled on these - why ? Price. Yes. Forged . Yes. Great look. Yes, More knives in the set than others? Yes. But the result wasn't clear until they arrived and I was more than surprised on what a find these were. They are advertised as German steel, ok, and may have been made in China, but the key for the pricing point is that they are impeccably made. Strong, bevelled knives, which gives them substance and stability, really terrific weighted handles which are perfectly balanced and, man, they are sharp. VERY sharp. They cut through everything so far like butter. So much so I took a nice slice of a finger while gently cutting up a banana with one of the set of the serrated dinner knives (also very sharp) one morning - with almost no pressure it went right through the fruit and into my finger leaving a memorable gash (it healed, no worries). Blame me not the knives ! The larger knives are really substantial, some of the shorter ones a little less weighty but still excellent and that set of serrated steak/ dinner knives a knock out . The set also has about 7-8 more pieces than others comparably priced. You may not use them all but fun to have and why not? I can't think of a better purchase in the last few years in terms of value for money and functionality. Read more

This is an excellent knife set. I splurged on this set and I’m so glad I did. It has a great variety of knives that are well made and durable. They slice through everything effortlessly and have a good weight and balance. The set is beautiful, but the block itself has a large footprint so make sure you have room for it. Read more

These are really nice knives! They are amazingly sharp, and they sharpen up very nicely! I love the wide variety of knives. It seems like there are many options definitely one for every job. They are beautifully weighted and sized their functionally very useful. However, I took away a star because I think they are overpriced. I don’t know what I expected for $180 but I just think they should have been closer to $100 or $120. They do sharpen well, but they did dull faster than I would have expected and once I resharpened one, it seemed like it needed to be done after each use. Decent knives, just not worth almost $200. The angle of the knife block makes it easy to remove the knives without running into the bottom of the upper cabinets however, it is a wider block, so it does have a larger footprint. I wound up moving the block to my island as it is my largest prep area and there is more counter top space. Fortunately it is a nice looking set and looks good on the open counter. I follow the instructions to handwash the knives after using so I have had no issues with them potentially rusting. The knives are sharp and I like their weight and the feel of the handles. Read more
