If you’re serious about your roast game, this pan is your new sous chef. It handled a massive 25-lb turkey without flinching, just rock-solid support. I was able to dry brine on the fabulous sturdy rack getting to all those turkey bits without getting awkward. The rack design is smart... it keeps the bird elevated for perfect airflow while letting every drop of flavor drip into the veggies below. The skin crisped perfectly and gave me gravy so good folks were eating it by the spoonful. I also love the vertical handles! Finally a roasting pan that doesn’t steal precious oven real estate with handles sticking out sideways. The solid handles had ample room for mitts and made loading and moving the pan easy. Heat distribution from the 3 layer Stainless is perfection. No scorching. No hot spots. Everything cooks evenly, and the pan holds heat beautifully when you pull it out to rest. Like my wife, this has a nice rack. The pan is solid. Good elevation with the rack, so very usable with convection. Used this for an 18lb turkey and it came out great.
