The instructions were a little murky but looking at the pictures, I disregarded the words. I sharpened steak knives, paring knives and scissors and it worked well. The design is ok, I put it along the edge of the counter, in order to not hit the countertop when I sharpened. The sharpener worked well. Easy storage as it is small enough to put in the drawer. The angle was good, as it sharpened just fine! Read more
I was pleasantly surprised that my package was delivered one week after I placed and paid for my order instead of two weeks as originally indicated (I am on the other side of the globe). Many thanks to all those who made the fast delivery possible. I am an amateur at knife sharpening, but this excellent tool helped me to turn out sharp blades at the first try. Incredible! It is obviously well-designed and well-crafted, robust but light, which makes for portability, and its utter simplicity greatly contributes to ease of use. I had an older Chef's Choice sharpener for 3 years that was finally wearing out. I ordered a new Chef's Choice 4643 and this one because it has a scissors sharpener and a selectable blade angle. I have a number knives that I keep sharp, some are less expensive Japanese knives that work well, but many are more expensive Japanese and German knives. Although I like the size and weight of this sharpener and it is easy to use, I wasn't happy with the way the blades slide through the sharpening slot. The instructions say to pull the blade through the sharpening slot10-15 times. Having set the sharpener to the preferred angle, the knives did not easily slide on the sharpening slot. Then knives seemed to get caught in the slot and did not move smoothly. The polishing slot worked better, but the knives were not sharpened, and even duller than when I started. Die hard that I am, I did try sharpening some of the knives again in case I did something wrong. The knives finally did get sharpened, but it took multiple tries. I also tried the scissors sharpener which was the primary reason I bought this sharpener. It did help to sharpen the scissors, but I believe I could find a dedicated scissors sharpener for less than $50. I decided to return this sharpener and stay with the Chef's Choice sharpener that lasts for at least 3 years for my knives. Read more
So I learned to sharpen knives a few different ways over the years. Sharpening stones and honing oil are amazing if you have the time and the patience to learn to hold knife at the right angle, and learn the right pressure, and know when to switch to the next stone. We will not even get into grinders and polishers. But what if you are a normal household where you want to dependably sharpen your kitchen knives and or pocket knives to a nice useful edge? I have owned three or four similar style countertop sharpeners like this, and this is the first one I would recommend to others. I like the adjustable angles to create or repair your blade edge and finish it to a smooth and very sharp finish correct for your knife. Will it make it truly "razor sharp"? In most cases probably not, but if you spend a bit of time with the sharpener and learn how to use it, you can get it pretty close. I will say that it noticeably improved the quality and the cut of all of my kitchen knives and two of field knives with little to no actual effort. Will I be able to shave with any of them, no. But why would i want to? If you are looking for a simple to use sharpener to help you get most out of your household knives, this will probably suit your needs. If you are looking for something to make you a professional knife sharpener for a new career, you probably should look elsewhere. Read more
