I've been a chef for 26 years... I have always sharpened my knives on my whetstone, but after having carpal tunnel surgery and surgery on my elbows, my hands are not as stable as they once were. Holding a perfect angle is not as easy as it once was either. I bought this sharpener on a whim, just to test it out and I gotta say, I'm very impressed. I used the stone wheel (or whatever it's called) just as I would a whetstone and the edge is just as sharp, if not sharper than it was doing it freehand. The video is misleading... do NOT rock the wheel back and forth I on the blade! That is not good for the edge. Put light pressure on the wheel going from handle to tip each time for best result. Other than that, I have zero complaints. Extremely easy to use, perfect size, and for the price it's totally worth it! I highly recommend to any chef or home cook to get one of these! Read more
