Wonderful 6 inch chef's knife. I now only use 2 knifes in my kitchen. This one and a slightly larger Nakiri knife from Cangshan. This knife is able to get very sharp, as it has a good hardness to the edge. And it stays sharp for a decent amount of time. Like a couple weeks of regular use. Like any good knife you should maintain its edge and never let it get dull. so slap it against a honing rod every week and it will not let you down. Balance of this knife is good. The handle feels good in hand. I would recommend this knife to anyone who is looking for an upgrade in their kitchen and doesn't want to spend $100+ on a knife. Read more

My old Chef’s knife is really thin and the handle isn’t very good. I got this Cangshan German Steel knife to replace my old knife. Cangshan knife is the BEST Chef’s knife I have ever used. The wide blade provides better control when cutting tougher foods. The blade has 16 degree angle per side with a HRC hardness of 58, and it keeps a sharp edge. The handle has a terrific feel, comfortable, ergonomic design and makes this a well-balanced knife. This knife will probably last a lifetime. If you are looking for a Great Chef’s Knife, look no further, because this is it.
