Secondly, being heavier than other griddles helps prevent warping and cracking. Additionally, the ceramic surface allows for cooking without slathering it with oils or other lubricants. Meats, fish, poultry and vegetables release completely using utensils designed for non-stick surfaces, and food tastes best when heavy coatings of cooking oil aren't required.
