I use several different types of knives in my kitchen and need them to be super-sharp. I use several small paring knives, several sizes of Chef's knives, a Nakiri, Carving knife, Butcher knife, Boning/Filet knife, Vegetable knife, etc. I used to use a pull-through and honing rod, but they weren't getting my knives sharp enough. I reviewed several different types of sharpening tools - the sharpening system was too complicated and required assembly to sharpen a single knife - too much work. The pull throughs didn't get my knifes sharp enough and didn't provide for different grit stones. The Warthog Vj-Sharp A4 was exactly what I needed; simple to use, a variety of stone grits and it gets my knives unbelievably sharp. Watch a few videos and use an older knife for your first try. The 325 grit is good to fix up an older knife blade that has been abused, but a bit coarse for my knives because I do keep them so sharp. I purchased the 600 and 1000 grit stones, using the 600 grit most of the time, finishing up with 1000 and a leather strop. It takes me about an hour to sharpen 25 or so knives and they are so sharp (razor sharp) I have to be careful because they slice deep into my cutting boards. Most of my knives were between 15 and 17 degrees, so I use the 15 degree setting for all of my knives.
