I've had the Chef's knife for about 2 years and have even bought them as gifts for friends and family. Finally bit the bullet on the whole set to replace my crappy scalloped blade set. (Side note: don't buy the scalloped blades. You can't really sharpen them and they don't "stay sharp" like they tell you. I bought rhem before I knew anything about blade sharpening and cooking). This set is the real deal. Every blade is crazy stupid sharp out of the box and the honing rod works excellent. With daily use for about 2 months, the edge is still razor sharp. I give them a quick hone every 6-10 uses. My wife and son are afraid of them but appreciate the efficiency of cutting without slipping through your food LOL. - Great edge retention. Feels brand new again after a quick hone (15 passes on each side) - Great handle...premium feel. Solid. Balanced. - The dining knives have serrations towards the tip to hold your food in place when you make your cut...nice feature - Bread knife does great work on crusty loaves - Your big 3 (chefs knife, santoku knife and slicer) are greatly proportioned.
