I can't say enough great things about this knife set. I've had an individual Calphalon knife that I have loved for years, but I never considered buying a full set. Instead, I thought I would try out some Henckels knives since they have a reputation for being good. Opened those Henckels knives and had them repackage to be sent back within 5 minutes. They were trash. So I decided to go with Calphalon since I had that one great knife. This set is forged steel, so you're not going to get the cheap feel of something stamped. The weight is going to be a touch heavier, but they are very well-balanced and comfortable to hold. Plus, they are very sharp right out of the box. BUYER: Please know what you are buying and NOT buying... You are NOT buying an impervious, undamagable stainless steel knife. Even stainless steel silverware will spot and discolor. An expensive Shun Knife, like these Calphalon knives, is also made from carbon steel—but with the Shun knife the blade is imixed with stainless steel for a higher quality metal amalgamation. It is the softer carbon steel that allows the knife blade to be honed to a sharp edge, yet will discolor, pit and rust. A less expensive Calphalon Knife is also made of carbon steel, amalgamated with “No stain steel” —likely a lesser quality of steel, hence the affordable price. The carbon steel in both knives is likely to stain and rust IF YOU DO NOT TAKE CARE OF THEM PROMPTLY AFTER USING!!! 1. NEVER PUT IN DISHWASHER: The strong DW detergent will literally “eat” the thin sharp edge of the knife, making it jagged. In the DW water sits on the knife blade, discoloring it and eventually rusting it. The dryer in your DW just can’t dry it quickly enough. 2. Wash and dry you knife well and immediately after each use: Especially dry the blade near the handle. Do not allow acidic foods, juices to sit on the blades— again, it will discolor and rust the soft carbon steel component in the blade. 3. Please don’t ruin the sharp edge on the blade by using the blade itself to scrape food off your cutting board— use the BACK SIDE of the knife to scrape food from your cutting board. 4. Use the right kind of cutting board— preferably plastic— not your granite countertop, or your ceramic dishes, or glass— it will ruin your knife edge, making it harder and harder to restore the sharp edge you had on your knife after first buying it. If these simple rules are followed, your knives will perform flawlessly for you— take an online tutorial— and last a long time. A knife that has been inadvertently put in the dishwasher and now has a jagged, pitted edge can be taken to a good, professional knife sharpener who can remove the jagged edge—albeit with the loss of some of the blade— and restore the sharp edge. In this Calphon Knife Set, they have, to a degree, idiot proofed the sharpening care of the knife, a great advantage for fast- paced living and cooking! Read more

These babies are sharp and dependable. I have been using my Calphalon knives for almost 3 years and they have not dulled at all. They practically sharpen themselves since the knife block comes with a sharpener in each port. I use these knives almost every day to cut various meats and produce. They slice through everything with ease. Last night while preparing scallions for some firecracker meatballs, I sliced right through the fleshy part of my left index finger. The cut took no more than a split second to completely separate a 1/2 inch long section of flesh from the finger and could not have been cleaner. In fact it was virtually painless . . . at first. The wound was significant enough that it had to be cauterized - which is the painful part . . . But I digress. Let me just say that I am even more impressed with my Calphalon knives today than I was when I first got them almost 3 years ago. I will be buying a set for each of my adult children when they're ready. Had Conan the Barbarian been gifted these suckers, he would have been in such awe at the otherworldly quality that he would have sent a word of thanks straight up to Crom. Samurai sharp baby!!! I love this knife set. I love the self sharpening feature and have gotten a lot of use out of it as someone who cooks up to 5 times a week. I have noticed the large knife for chopping does get dull very quickly, however the self sharpening feature is helpful. I do use a sharpening rod in between when I’m using it a lot in one sitting. The block seems to stay clean and absorb some moisture well. The scissors are great for cutting meats, and after washed, good for overall use. I use the main cooking knives a ton of times per week. DOES NOT COME WITH BREAD KNIFE- it is sold separately. That was my only disappointment, but on me for not reading description more clearly. Have been using these since Christmas, and really love them. The block and knives are very stylish looking on the countertop, and is not overbearing my large if needed to store in cabinets. I would recommend this set over many other sets we have purchased in the last 10 years. I see myself having this for a long time. It’s not recommended to put these in the dishwasher, but I have a few times without any damage as long as I remove and dry them immediately. If you take care of them, they seem like they will last a long time. Read more
