Extremely Sharp out of box!
I am a knife enthusiast and home cook with years of experience of restoring and sharpening western style and Japanese cutlery. I have found that most new knives out the box could use a little touch up on a strop at least. These are perfect. I guess I got lucky. I purchased these as a gift and I’m so impressed I’m may get another set. If you’re looking to buy these and want an upgrade try these knives Treat them well and they will last. Hand wash ONLY….DONT chop through bones or pry things open. About some of the negative reviews… From experience and speaking to knife makers over the years, The “VG -max” Steele they use is very hard but that also makes them susceptible to chipping if used incorrectly. This steel holds a sharp edge longer but also makes them brittle(if used properly this not a problem and can happen to any knife). So good care is needed. DO NOT use these to pry or cut through bone. Use a cleaver for heavy tasks. Chicken joints and fish are fine in my experience. Read more

Only set of knives I will ever need.
Great knives! Sharp, very sharp. They have caused me to throw away my inferior knives. I personally have professional sharpening done 2-3 times per year, and could not be happier with them. If you do your research you can buy less expensive knives and get the quality blade you get with this set. You can also buy this set and never look back. Read more

Very brittle knives
I only used my 8” chef knife for cutting herbs for the first week. Now granted I am a professional chef in a large kitchen in Las Vegas but these knives chip like crazy. They are very sharp but just a few rocks of the blade and you can feel them chip right down. I’ve had mine two months now and have to get a new edge put on them already. It’s so chipped it looks serrated. I would say these are good for home cooking but not the premier professional knives they’re advertised as. Waste of $500 imo Read more
